Legendary chef Jerry Mai will bring her Vietnamese flavours to Victoria’s Mornington Peninsula with a summer residency at Tucks in Red Hill South. Every weekend for three months Jerry will be barbecuing up a storm with a focus on local ingredients.
Expect to dine on produce from Torello Farm, Main Ridge Bakery, and Peninsula Fresh Seafood. The focus of Jerry’s cooking will be squarely on the smoky charcoal grills, dishes include Wood-grilled Dromana Bay mussels, black pepper sauce and Vietnamese mint served with Main Ridge bread rolls. Further dishes include Grilled octopus skewers with lemongrass sate butter or finger-licking Tamarind lamb ribs, cucumber tomato mint salad, prik nam pla and Grilled rump cap, herb salsa, watercress salad. Seafood will also be highlighted with seafood platters and various sashimi, cooked king prawns, oysters and Dromana Bay mussels
Everything will be served with Tuck’s wine and cider, as well as local beer from Jetty Road and Montalto.
